There are not many starting options for a Minotaur team due to their excessive cost. 2 Re-rolls is the closest to a conservative approach you can get with a Minotaur Roster. It is however fairly easy to 3 or even 6 Dice Blocks/Blitzes due to Horns, so maximise that option and you should get by okay with 2 re-rolls. Starting with the Doombull also gives you a little more reliability if you are willing to lash out at a team mate, but if not they will lose their Tackle Zone. It gives you the option of using the Doombull to carry the ball too and the Doombull has a higher Av than normal Bullgors. You can also start with the option of an additional Bray on the bench, which can be useful as they are fairly squishy. You could elect not to take this option and start with a lower TV, which may give you some inducements in your early game, and also allows you to buy an Apothecary after 1 game, or save up for more Bullgors.
Starting with 1 Re-roll is normally very risky. It still is risky in a Minotaur team, however you have consistent 3 or 6 dice Blocks fairly easily so it shouldn't be too problematic. Starting with only 1 re-roll does allow you to start with all your Bullgor, which means skilling them up should be quicker and gives your roster a higher average Strength. Going forward you need to save up for the Doombull another Re-roll and an Apothecary.
