Because of the large number of choices available to mixed teams, there are many ways to go. However, remember that the mixed teams have VERY expensive Team Re-rolls, so it's a good idea to get them at the start. For a team with the long-term in mind, dropping the apothecary and the Wardancer (from the first setup listed) for extra TRRs is a good idea.
Bearing this in mind, there are also a few other considerations. If you want to eventually use a Treeman or Ogre, it's worth taking them in your starting lineup at the expense of a third reroll. This is because, lets face it, Treemen won't be getting any spps from touchdowns, and if you want them to progress they need to get to 3 cas pretty quickly so they can get block; it's easier to do this against starting teams which haven't already loaded up on block and guard.
The temptation to get a halfling is nice, as a TTM last minute combo, but realistically, you really want to get four longbeards, and then just load up with linemen. A halfling will survive ok if you buy one later on, but if your treeman takes root for the first half a halfling will just die on the LOS.
Getting an elf is probably a good plan, as AG 4 will be invaluable. It doesn't need to be a thrower though, a lineman will certainly do the job.
