As is the case with kidneys, livers are used mostly for drinking purpuoses. The livers aren't improved at all by the goblins playing blood bowl, actually quite the opposit. The donors are put on the field dead drunk to test the quality of the liver: if a goblin can still play half decently, than the liver must be fine.
