Goat Curry

A good Goat Curry, like any curry, starts with the onions. The onions are the foundation of this dish - indeed any curried dish - and are slowly sauteed to create solid flavour base.
Unlike the Jamaican version, spices are toasted dry (and whole, where appropriate,) to bring out their fullest flavour then blended just before use.
The meat is off the bone and diced, browned with the spices and onions then cooked in the base of the gravy - the tomatoes. Yoghurt is blended in at the end, taking care not to curdle it.
While not as spicy as it's Jamaican counterpart it does has it's heat but this is to compliment the other flavours not hide them.

Served with rice and, of course, roti or naan.
