The 2nd time after being vaccinated was nowhere near as bad as the first. Unvaccinated.

I hope you get better soon. From what my circle has read and listened to from doctors, vitamin D levels are a massive component of human health. Low levels correlate to bad outcomes in several areas of health.
Sunlight is key, and sunlight is king. I think I have learned that vitamin D supplementation is better at maintaining good levels than it is at building up to try and establish good levels, but some, ANY level is massively better than none. Bank sunlight in the summer if you can, was my research take-away. It takes some effort these days to find a well credentialed doctor discussing how critical vitamin D's is, but almost every website acknowledges it's importance.

Stay away from Paxlovid. Vitamin D is great advice as well as zinc & elderberry.
