i calculated the odds thinking it does, as the wording of 2 heads seems to be "+1 to all dodge rolls" which seems to cover everything

Two heads isn't modifying the agility table. It's a straight +1 to dodges.
An st5 two headed break tackle troll dodges into a cage (3TZ) on a 3+
An st6 two headed break tackle troll dodges into a cage (3TZ) on a 2+

Two Heads (Mutation)
Having two heads enables this player to watch where he is going and the opponent trying to make sure he does not get there at the same time. Add 1 to all Dodge rolls the player makes.

It wasn't that I wanted a true answer, I was just bragging about my Troll. Though, I did learn that St6, BT (ag6) stacks with two heads. So it was a great brag in the end as we all learned something new.
